Smoky, Red Spicy Sauce

Ingredients

  • 1 large very ripe tomato
  • 3 medium-size tomatillos
  • 2 small pickled tomatoes
  • 3 garlic cloves
  • 1 small onion
  • 7 Arbol chile pods
  • 1/4 cup cilantro
  • 1 teaspoon salt
  • 2 tablespoon vegetable oil
  • 1 teaspoon red pepper flakes

Directions

1Wash your vegetables and dry them. Now we are going to char our vegetables. There are few ways you can do that. One, hold them with tongs over the flame of your gas burner stove. Two, use chef’s mini torch but be careful not to burn your veggies. Three, place them on a foil-lined baking sheet and stick them under a preheated broiler, and four, use a skillet. I’m going to go with the skillet. Do not peel garlic. Char it in its skin.

2Peel the skin off the pickled tomatoes and set them aside. When vegetables are almost done charring, add arbor chile pods. Remove vegetables from the skillet, cut them into smaller pieces, and place them in the food processor. Add salt, red pepper flakes, and vegetable oil. Serve with whatever you like.

 

Brown Sugar Buttermilk Syrup

Ingredients

  • 1 stick of butter
  • 1 cup of brown sugar
  • 1 cup of buttermilk
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon coconut extract
  • 1/2 teaspoon baking soda

Directions

1In the 4-quart saucepan, melt together butter and sugar. When the mixture starts to show bubbles, slowly add buttermilk while mixing. When it starts to boil, add baking soda mix well for 30 to 45 seconds, take it off the heat, and add vanilla and coconut extract. And it is done.

Sweet Crepes Based on Milk

Ingredients

  • 4 cups of warm milk
  • 2 cups of flour
  • 2 eggs
  • 4 melted butter
  • 3 tablespoons sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon of salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract

Directions

1Beat together eggs, sugar, salt, vanilla extract, and coconut extract. Add butter and mix again. Add a third of the milk and all of the flour. Start mixing when everything is combined. Slowly add the rest of the milk and baking soda. Put batter aside for 20 to 30 minutes to rest.

2Heat your frying pan well on medium-high heat before frying. If you start frying before the frying pan is hot enough, your crepes will be ripping. Also, oil your pan lightly every time you are frying a new crepe. When you do, that batter gives extra bubbles and makes crepes taste good and look good. Fry crepes on both sides till nice and golden.

3You will end up with 18-20 crepes. It all depends on the size of your pan. Serve your crepes with your favorites while hot. I prefer mine with homemade peach jam and a dollop of cream. Enjoy.

Soft and Fluffy Baguette

Ingredients

  • 2 cups of warm milk
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 tablespoon yeast
  • 4 tablespoons of melted butter
  • 3 3/4 cup flour
  • For Boiling Water
  • 6 cups of water
  • 2 tablespoons sugar

Directions

1Mix together flour, salt, sugar, and yeast. Add butter and milk, knead it into a dough. And let it rise. After it rises, knead it into the ball and let it rise one more time. Divide the dough into four equal pieces, roll out each piece into a rectangle and roll it into a Baguette.

2Cover Baguettes with the kitchen towel and let them rise till they double in size. While dough rising in the deep frying pan, bring water to boil. Add sugar. When baguettes are doubled in size, deep each baguette into the boiling water for about 15 seconds on each side. After place, the baguettes onto the baking pan covered in parchment paper, cut lines sideways, sprinkle them with flour and let them rise for about 20 to 25 minutes. Put them in the oven and bake at 390 degrees for about 20 minutes, turn the pan and bake for another 7 minutes.
