Beef and Barley

Ingredients

  • 1.5 lb beef
  • 4 tablespoon vegetable oil
  • 1 onion
  • 1 carrot
  • 1/2 tablespoon corn starch
  • 1 curry cube or 2 teaspoons of curry
  • 1 1/2 teaspoon cumin
  • 1 teaspoon black pepper
  • 1/2 green pepper
  • 1/2 half red bell pepper
  • 1 cup green onions
  • 3 tablespoons fresh parsley
  • 2 garlic cloves
  • 1/4 pouch asparagus
  • 3 cups barley
  • 9 cups water
  • 3 tablespoons butter
  • Salt to taste

Directions

1Barley has a lot of starch on and in it. Wash it well to prevents it from sticking. But if a sticky blob is what you’re going for, no need to rinse. In the pot, add 9 cups of water, barley, butter, and salt to taste and place it to boil. Keep an eye on the pot as barley will give off a lot of foam at first and can cause the pot to boil over. When the barley has reached a boil, lower the heat to a low simmer, cover, and continue to cook until the barley is done. For pearl barley, start checking at 25 minutes for hulled barley, start checking at 40 minutes. The barley is done when it has tripled in volume and is soft yet chewy. Add more water if the pan becomes dry before the barley has finished cooking. Check every 5 minutes until desired chewiness is reached.

2While barley is cooking we will start on beef. Wash the meat and cut it into bite-size pieces, wash and cut all the vegetables. Cut asparagus into 1-inch pieces. In the deep frying pan heat up the oil, add beef, and brown it till golden brown. Add onions and fry it till onions become translucent, add carrots. Fry it for a few minutes and add green and red bell peppers and all of the spices including garlic. Fry it for another 3 to 4 minutes and add corn starch, mix well and add 5 cups of water. Mix well and bring it to a boil. Turn it down to simmer, cover it with the lid and simmer it for about 20 to 25 minutes.

3Add asparagus. I don’t like my asparagus mooshy so I will only be cooking it for about 3 minutes. But you can cook it to your liking. Add green onions and salt to taste. Mix well and get it off the heat. Dish up barley, pour veggies and beef over barley and, enjoy!

 

 

 

Paccheri Pasta Stuffed with Pork

Ingredients

  • Pulled Pork
  • Paccheri no.125 Pasta, 16 oz
  • 1 zucchini
  • 1 jar of Alfredo Sauce
  • 1 jar of Ragu
  • 1/2 cup green onions
  • 1/2 teaspoon Tony Chachere original seasoning
  • 2 cups cheese

Directions

1Bring water to a boil, add pasta, bring to a boil again. Turn the heat down and boil pasta till halfway done. Drain your pasta and rinse with cold water and set it aside.

2In the mixing bowl combine together pulled pork, Alfredo sauce, zucchini, green onions, and seasoning. Stuff pasta with pulled pork.

 

3In the baking pan, pour Ragu and layout the stuffed pasta on top. Sprinkle cheese all over the pasta. Cover it with foil paper and bake it at 425 degrees for 30 to 35 minutes. Enjoy!

 

 

 

Oven-Roasted Pulled Pork

Ingredients

  • 3.9 pork roast
  • Your favorite seasoning
  • 1 pouch of green onions
  • 4 bay leaves
  • 11/2 tablespoons dry minced garlic
  • 1 cup water

Directions

1Season your roast with your favorite seasoning. (I used Tony Chachere original seasoning) Wrap the roast up and refrigerate it overnight. Refrigerating overnight is optional but highly recommended. It makes it so much more flavorful.

2Preheat oven to 325 degrees. In the baking pan, add 1 cup of water, bay leaves, onions, and garlic. Place roast on top. Cover it with foil well, so when the roast is roasting, no steam is escaping. Cook your roast for 4 hours and 30 minutes. The fat on your roast will melt away, and you will end up with juicy pulled pork.

3Pull your pork apart, add your favorite barbeque sauce, and enjoy your delicious barbeque pulled pork sandwiches!

 

 

 

Honey Walnut Shrimp

Ingredients

  • 2 lb medium or large shrimp
  • 1 cup of corn starch
  • 1 egg
  • 6 tablespoons honey
  • 4 tablespoons condensed milk
  • 5 tablespoons mayonnaise
  • 4 tablespoons butter
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 1 1/2 cup of walnuts
  • 1/2 cup vegetable oil

Directions

1In the large bowl, add shrimp, salt, red pepper flakes, and egg, mix well. Add corn starch, mix it well and set it aside for 20 minutes. While we are waiting on shrimp, we will start making the sauce.

2In a small bowl, combine together mayonnaise, condensed milk, and half of the honey. Mix well and set it aside for later.

 

3In the saucepan, bring water to a boil. Add butter, honey, and brown sugar. Cook the mixture down till it thickens, add walnuts and mix it well. Keep the mixture warm.

 

4In the frying pan, bring oil to medium heat. Place shrimp and fry it on each side till lightly golden, about one minute on each side. When done frying, place shrimp into a large bowl. Add walnuts and mayonnaise sauce, mix well and enjoy.
