1Make Green Chile Avocado Sauce, Smokey Red Spicy Sauce, and Carrot Salad. Heat tortillas. Now it is time to assemble tacos. Place red sauce on the tortilla, fallow with carrot salad, and green chile avocado sauce. Garnish with cilantro or parsley and serve it with lime and margarita. These tacos also go great with citrusy beer.

1Make Green Chile Avocado Sauce, Smokey Red Spicy Sauce, and Carrot Salad. Place them in the fridge to chill. While these are chilling, we will start on beef.

 

2Cut beef into pea-size pieces. I find it easier to cut meat when it is half frozen. Chop onions. Heat oil in the skillet, add onions. Fry onions till golden, add meat, salt, and red pepper flakes. Fry it till golden brown and set it aside.

3Heat tortillas. Now it is time to assemble tacos. Place red sauce on the tortilla, fallow with carrot salad, fried beef, and green chile avocado sauce. Garnish with cilantro or parsley, and serve it with lime and margarita. These tacos also go great with citrusy beer.

 

 

Carrot Salad

Ingredients

  • 10 oz carrots
  • 1/2 large onion
  • 1 tablespoon fresh dill
  • 3 garlic cloves
  • 1 tablespoon vinegar
  • 3 tablespoon of vegetable oil
  • Salt and pepper to taste

Directions

1Heat oil in the skillet at medium-high heat, add onion and garlic. Fry till golden, add carrots. Stir and saute it for about 4-5 minutes. Add salt, pepper, and vinegar. Sauteed for another 5 minutes, add fresh dill. Mix well. Serve with chicken and mashed potatoes.

 

Green Chile Avocado Sauce Recipe

Prep time: 15 min

Ingredients

  • 1 avocado
  • One 4 oz. can fire-roasted green chiles
  • 1 garlic clove
  • 1 tomato
  • Juice from 1/2 lime
  • 1 tablespoon fresh cilantro or parsley
  • 1/4 water
  • Salt and pepper to taste

Directions

1In the food processor or a blender, combine avocado, green chiles, garlic, tomato, lime juice, water, and cilantro. Add salt and pepper to taste. Chill it in the fridge for one hour and enjoy.
