My Dutch Oven Black Bread

Ingredients

  • 1 3/4 cups ray flour
  • 2 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 1/2 cup finely chopped walnuts
  • 1/4 cup flax seeds
  • 3 tablespoons cocoa powder
  • 2 teaspoons coriander powder
  • 1/2 teaspoon yeast
  • 1 cup of starter
  • 2/3 cup buttermilk
  • 1 cup water
  • 3 tablespoons melted butter
  • 3 tablespoons molasses
  • 1/2 cup strong black coffee

Directions

1Combine dry ingredients, mix well. Combine wet ingredients, mix well. In the large bowl, combine wet and dry ingredients. Mix well. The dough will be sticky. Cover your dough and let it rise for 1 hour and 30 minutes. Knead the dough for 5-10 minutes inside your mixing bowl. Line your large mixing bowl with parchment paper and set it aside.

2Spread a little flour on the work surface, and quickly before your dough starts sticking to your hands, shape it into a ball and place your loaf inside the bowl with parchment paper. Cover it and let it rest for about 30 minutes. Cut lines through your dough. Cover the dough and leave to prove for 1 hour. Brush the sliced parts with water and sprinkle sesame seeds and walnuts all over it, pressing them gently into the surface. (This part is optional.)

3Preheat the oven to 425F With your dutch oven inside the oven. Transfer your loaf inside the dutch oven and cover it with the lid. Bake for 45 minutes, then turn the oven down to 350F, take the lid off, and bake for 27 minutes or until dark, crusty-looking, and well-baked at the bottom.

 

 

 

Chicken and Beef Cutlets

Ingredients

  • 1 lb ground beef
  • 1 lb ground chicken breast
  • 1 slice of homemade bread (1 cup crumbs)
  • 2 eggs
  • 1 onion
  • 1 potato
  • 1 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon powdered garlic
  • 1/2 cup milk
  • 3 tablespoons of butter
  • 1/2 cup vegetable oil for frying

Directions

1In a frying pan, fry onions to golden brown in butter and set them aside. Run a slice of bread through the food processor. Peel a potato and cut it into 8 large pieces.

2Run the potatoes, fried onions, and eggs through a food processor. Afterward, combine the mixture with meat, bread crumbs, spices, egg/potato mixture, and milk. Mix well till it’s all nicely combined. Let it rest for about 30 minutes.

3Divide the mixture into 17 equal meatballs. They will be about 2 1/2 inches round. Deep them into flour and shape 17 oval patties. Heat up vegetable oil on medium heat. Place cutlets into oil and fry them till nice and golden on each side. That will take about 2 to 2 minutes and 30 seconds on each side. Serve them with mashed potatoes, pasta, or in the sandwich. Loaded Meatball Soup

Ingredients

  • Meatballs
  • 3 1/2 quarts water
  • 3 bay lives
  • 3 tablespoons butter
  • 1 carrot
  • 4 potatoes
  • 1/2 onion
  • 2 cups of red beans
  • 1/2 green pepper
  • 1/2 red bell pepper
  • 1/2 cup tomato sauce
  • 2 teaspoons cumin
  • 1/2 cup green onion
  • 3 cups of spinach
  • 2 tablespoons of fresh dill or parsley
  • Salt and pepper to taste

Directions

1In the pot, bring to boil water and bay lives. Add meatballs, bring it to boil again, turn the heat down to medium and simmer for about 15 minutes. When meatballs begin to boil, the foam will appear. Take that foam off. While meatballs are cooking, we will start on the base of the soup.

2Prepare your vegetables and spices—peel potatoes and cut potatoes into thin circles. Clean spinach and green onions, cut them into small pieces. Peel and shred carrot, cut up onion, and bell peppers.

3In the large saucepan, melt butter. Add white onions and bell peppers all at the same time. Fry it till onions become translucent and just begin to turn golden. Add carrots. Cook for about 5 minutes, add all the spices and ketchup, mix well, cook for another 3 minutes, and add beans. Mix well, add about two ladles of broth from the meatballs into the mixture, mix well and let it simmer for about 2 minutes. Add potatoes, and cook it till potatoes begin turning translucent at the edges.

4When the rice outside of the meatballs looks done, add the vegetables into the soup. Bring it to boil, turn it down to medium, and let it simmer till potatoes are done cooking. Add green onions, simmer it for two minutes. Add spinach, simmer for another 2 minutes and enjoy!

 

Meatballs

Ingredients

  • 1 lb ground beef
  • 1/3 cup rice
  • 1 onion
  • 8 tablespoons of tomato sauce
  • Salt and pepper to taste

Directions

Peel and mince onions. In the large bowl, combine together all of the ingredients. Mix all of the ingredients and put the meat mixture in the refrigerator for about 30 minutes. Shape it into meatballs.

You can make these ahead of time and freeze them. I sometimes triple the recipe and freeze meatballs, then cook them in soups or spaghetti sauce to serve them over pasta.
